one chicken breast
two cups of rice
1 - 2 tbsp soya sauce
peas
carrots
3-4 eggs
milk
salt
pepper
I usually estimate with all my ingredients. So you will figure out the amounts that work best for you in time. But the amount in the recipe is a basic amount that will be good for your first time.
Directions
1. Make the rice. I usually use Minute Maid white rice and I do two cups of rice. This can be done before hand and refrigerated for a couple days if you'd like.
2. Make the scrambled eggs. If you are using two cups of rice, I would recommend using three or four eggs. Add a bit of milk and salt and pepper to your scrambled eggs. This can be done earlier in the day.
3. Cook the chicken breast however you normally cook it (in the oven, fried, etc.). This can be done earlier in the day or the day before and stored in the fridge.
4. Put some rice and scrambled eggs into a frying pan. I often have two or three times the amount that goes in a frying pan so I either use a couple of frying pans or do them in rounds. It is up to you. Just make sure the ratio is good. Like use a third of the rice and a third of the eggs. Put a tiny bit of butter in the frying pan so it fries nicely.
5. Add some soya sauce. 1 tablespoon is good to start. But you can add some more in later if you want a stronger taste. Mix it up. Mix regularly with a fork or another utensil so that the bottom does not get burned.
6. Add in some vegetables. I usually choose carrots and peas. Carrots can be cooked before or put in raw, depending on how you like the texture.
7. Cut up the chicken and put it in as well.
8. The amount of vegetables and chicken does not matter. It is just how much YOU want in your fried rice!
9. Make sure you continue to move the rice around so that the bottom does not burn. Add more soya sauce if you would like. Usually people will include 1 - 2 tbsp of soya sauce, but it depends on a lot of things. You can decide how much you want for the desired taste.
10. Once your rice is a nice colour of light(ish) brown and you have taste tested it, your fried rice is ready to be served!
Two cups of rice and three to four eggs often makes enough for six people.
